Mmmhmmm…I love me some grilled corn. I like it, very grilled (almost charred) as you can see from the picture. We like to spread a lime and parmesan butter mixture on our corn when it’s grilling. It really can’t be beat. We discovered this recipe the summer we got married, and since then we’ve found ourselves in the middle of December, outside grilling corn (the frozen cobs you can find, obviously not nearly as good). I can’t wait to grill up our homegrown corn.
We had a “Beginning of Summer Feast” the other day. My hubby is a teacher, so there is always this sense of great excitement that first day of summer. So Sunday night, the night before he didn’t have to get up for work the next day, we ate like kings. Grilled teriyaki salmon, pear and sautéed almond salad, wild rice, and our super yummy grilled corn.
So without further ado, grilled corn-cob deliciousness (works for about 4 cobs):
Shuck the cobs if they are not shucked already. Try to give the husks to your chickens, see that they hate it and now are angry at you, quickly gather it out of the yard again and give them something to make them happy. Take 1/2 stick butter and melt it in the microwave. Add 3 Tbs lime juice, 2 Tbs lemon juice, 1/2 cup parmesan and garlic salt/pepper to taste. I throw some chopped rosemary in mine as well…just cause.
I like our sauce to have a lot of parmesan. Experiment with this and add more of whatever you like. It really is fool-proof.
Mix it all up. Using a baster brush, spread the stuff all over the corn. Place on your grill, adding more every time you turn the corn. This corn is also great just shucked off the cob or added to salsa, etc.
