Hot coffee with cream and sugar along with a warm, melty scone is the best morning snack in my opinion. You too can have warm scones in the morning…they are really rather simple to make.
This is a pretty basic recipe, which I find helpful because you change it however you like. You can mix it up a bit by adding cranberries, blueberries, chocolate chips or nuts. Or simply sprinkle sugar on top.
3 cups all-purpose flour, 1/2 cup sugar, 5 teaspoons baking powder, 1/2 teaspoon salt, 3/4 cup butter, 1 egg, beaten and 1 cup milk – I use almond milk…works wonderfully.
Preheat oven to 400 degrees and lightly grease a baking sheet. In a large bowl, combine flour, sugar, baking powder, and salt. Cut in butter. Mix the egg and milk in a small bowl, and stir into flour mixture until moistened.
Turn dough out onto a lightly floured surface, and knead briefly. Roll dough out into a 1/2 inch thick round. Cut into wedges, and place on the baking sheet. Eight wedges will create pretty large scones, like ones you find in a coffee shop. Feel free to cut them to whatever size you like or cut out different shapes with a cookie cutter.
Bake for 15 minutes, or until golden brown. Cool on a wire rack. Or, like I do, devour immediately. Happy Mornings.
